These Anti-Inflammatory Pumpkin Banana Chocolate Chip Muffins are a delicious, nutrient-packed treat perfect for any time of day. Made with pumpkin puree, mashed bananas, and our 4 Mushroom Blend, they provide anti-inflammatory benefits while supporting immunity and digestion.

Ingredients:
Muffins:
- 1 cup pumpkin puree (unsweetened)
- 2 ripe bananas (mashed)
- 2 eggs
- 1/4 cup maple syrup (or adjust to taste)
- 1 tsp vanilla extract
- 1 1/2 cups of gluten-free flour (or homemade oat flour -- just blend the oats!)
- 1 tbsp Alchemy 4 Mushroom Blend
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (use dairy-free if needed)
Optional Cream Cheese Maple Frosting:
- 4 oz cream cheese (softened; use dairy-free if needed)
- 2-3 tbsp maple syrup (adjust to taste)
- 1/2 tsp vanilla extract
Steps:
To Make the Muffins:
- Preheat your oven to 350°F (175°C) and line a muffin tin with non-toxic paper or silicone liners.
- In a large bowl, whisk together the pumpkin puree, mashed bananas, eggs, maple syrup, and vanilla extract until smooth.
- Add the gluten-free flour (or oat flour), 4 Mushroom Blend powder, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined.
- Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool completely before adding frosting (optional) and top with crushed pumpkin seeds!
To Make the Frosting:
- Beat the cream cheese, maple syrup, and vanilla extract together until smooth and creamy.
- Spread or pipe onto the cooled muffins.
